Duck is a special meat that has steak like qualities but lends itself well to be paired with fruit flavors. This recipe is a good way to introduce people to eating wild duck.
Your favorite crackers (Ritz works well)
Goat cheese
fruit spread (pineapple pepper jam, apple chutney, jalapeno jelly, etc.)
Butter
Duck breast
spices (salt, garlic, rosemary)
Serving tray
frying pan
cutting board
sharp knife
Prepare crackers by spreading a thin layer of goat cheese on each cracker and set aside.
Heat skillet to medium high heat.
Sear duck breasts for 45 seconds a side
remove duck and lower pan heat to low
add 2 tablespoons of butter to pan
slice duck against the grain into thin strips 1/8" thick and 2 inches long
season butter in pan with salt, garlic, rosemary
Add duck strips and let them relax in the butter for no more than 30 seconds a side.
Drape a strip of duck over each cracker
Top each cracker with some fruit spread and serve.
